More Pumpkin Please!

It’s not really fall until you’ve made yourself some pumpkin infused food dishes! Up on the blog today I wanted to share with you a couple of new recipes that I tried this past weekend. I’ve combined two of my favorite fall flavors here…wait for it…pumpkin and chai!! They’re a match made in taste bud heaven I tell ya.

Pumpkin is a nutritional powerhouse and can help ensure regular BM’s (bowel movements!) due to its awesome fiber content! It’s also rich in fat-soluble vitamin A and has a few minerals namely iron and copper. It’s also known to help sooth digestive upsets in both humans and canines alike!

PS. Don’t throw out the pumpkin seeds either! Roast them over low heat with a bit of cinnamon on top and voila! A tasty treat that will help curb cravings and support good blood sugar levels.

 

Chai Pumpkin Pie Smoothie

1 frozen banana

½ cup pumpkin puree

1 tsp chai honey (or any other unpasteurized honey)

2 tbsp non-dairy milk (I used an unsweetened almond/coconut milk variety)

2 tbsp unsweetened coconut yogurt

Spices

I used roughly 1tbsp in total between all spices

True cinnamon

Ginger

Nutmeg

Clove (2-3)

Handful of ice

Upgrades

  • I added 1tbsp of Bulletproof Collagelatin to my smoothie for an extra protein push!
  • I used Yoso yogurt as it contains live bacteria ,aka probiotics, which helps to support good gut health.

Place in your blender and mix it up! I used my vitamix and needed to help move things around so feel free to add another tbsp of non-dairy milk to help mix it up if you like.

Pumpkin Coconut Flour Pancakes

3 eggs

½ cup non-dairy milk (I used Vanilla Ripple for my recipe!)

½ tsp vanilla extract or ground vanilla pods

½ tsp cinnamon

½ tsp nutmeg

1 tbsp chai honey (or any other unpasteurized honey)

½ cup pumpkin

5 tbsp coconut flour

½ tsp baking soda

½ tsp sea salt

coconut oil spray for greasing the pan

Mix all wet ingredients together (eggs + non-dairy milk + vanilla + pumpkin + honey) in one bowl. In a separate bowl mix together the dry ingredients (cinnamon + nutmeg + coconut flour + baking soda + sea salt). Gently combine both bowls ingredients together in the larger bowl. Grease pan and pour out your batter. Flip after 3-5 mins. Serve with maple syrup and a berry of your choosing!

Makes enough for two people.
